「よいお年を!」(yoi otoshi o!, or "Happy New Year!") is a casual greeting, so you can use it with teachers who you are friendly with, or teachers who are younger than you or about the same age. 「よいお年をお迎えください」(yoi otoshi o omukae kudasai, or "I wish you a Happy New Year") is more formal.
